The best Lentil Salad

This very few ingredients lentil salad is a signature starter at our favourite Italian restaurant; there's something about both the texture & flavour of this salad that just works. The perfect side dish for just about anything. Give it a go, you won't be disappointed.

What you need

Enough for 4

Salad:

  • 300 g of lentils (both brown and green work)
  • 2-3 sticks of celery, finely chopped
  • 3-5 spring onions, finely chopped
  • seeds of 1 pomegranate (optional)

Seasoning:

  • Red wine vinegar (start with 2 tbsp and work yourself up)
  • Olive oil - however much you think is legal. My advice here: don't be shy
  • generous amount of salt & pepper to taste

Method

  1. Cook your (ideally pre-soaked) lentils in saltwater until al dente.
  2. Whilst the lentils are cooking, chop your celery & spring onion and prepare the pomegranate
  3. Let the lentils cool off before adding all ingredients to a bowl and add your seasoning- taste to adjust.
