Simple Beetroot Sauce

This is a super easy peasy beetroot sauce, made my blending cooked beetroot with a few spices, some olive oil and a bit of water. It can be spread on top of sandwiches, be used as pasta sauce, be eaten as part of a bowl (great avocado replacement) or be used as a dip. Since beetroot is quite sweet, I find that something acidic and/or salty goes quite well with it - coarse salt sprinkled on top, squeeze of lemon or lime, salty (vegan) feta ... Don't forget to be generous with a drizzle of olive oil & a generous grind of pepper as you are serving.. And save those beetroot peels to make some delicious crisps in the oven!!!

What you need

Enough for 4

0,5 kg of cooked beetroot

Dash of water

Dash of olive oil

Chili, Salt, Pepper to taste

Method

  1. Put all ingredients into a blender and blend until creamy
  2. Adjust water, olive oil, etc to your personal likings

Serve immediately or keep in the fridge for up to 3 days to spice up sandwiches, salads & co.
