Pea and Mint Soup

Fresh peas are in season during the summer season but you can easily use frozen ones for this. This is such a speedy meal; the mint keeps it cool and goes lovely with the naturally subtle sweet taste of the peas. Top with some sprouts and seeds and you're good to go.

What you need

  • Glug of oil
  • 2 onions, shallots or use spring onion instead
  • 3 cloves garlic
  • 3 cup peas (fresh or frozen)
  • 3 cups vegetable broth
  • salt and pepper to taste

Method

  1. Roughly chop your garlic and onions and fry for a few minutes in oil of your choice
  2. Add 3 cups of peas, 3 cups of vegetable broth, a few stems of fresh mint and simmer for around 10-15 minutes.
  3. Add a pinch of salt and pepper
  4. I like to blend mine; not completely but that the majority of the peas have broken down
  5. Season to taste; you may want to add a bit more mint, salt, pepper etc.
  6. Serve hot (or even cold if that's what you fancy!), drizzle with some good quality sesame or olive oil, add some sprouts, seeds or whatever else you fancy and enjoy!
