Salad with Dates & creamy Tahini Dressing

Dates stuffed with tahini are my favourite snack. This is my attempt at turning THE snack into a meal. It's got all the flavours and I think combines them in a beautiful way. Swap the lentils for another legume or grain, choose whatever salad/lettuce you like and feel free to add any other veg. As per usual, I encourage you to play around and make it your own recipes.

What you need

"Salad" (enough for 2)

  • 2-3 handful of whatever greens you like; I used a mix of lamb lettuce and rocket
  • 1 cup of cooked lentils, beans or grains; I used brown lentils
  • 1-2 cup of radishes; chopped up and ideally slightly roasted to take away their pungency, if you go for raw I would decrease the quantity to 1 cup and slice them thinly
  • 1 handful of feta; vegan or normal (optional but it adds a lovely saltiness to everything)
  • 1 handful of toasted walnuts

"Tahini Dressing"

  • 1/2 cup Tahini
  • 3 tbsp olive oil
  • 3 tbsp fresh lemon juice
  • 1 clove of garlic (optional but I love it)
  • Salt/Pepper
  • 2 tbsp of maple syrup
  • 1/4 cup water - you may want to add more but start with that and work yourself up

Method

  1. If you want to roast your radishes/some other veg then do that first thing; 20-30 minutes in the oven with a bit of oil, salt, pepper and a few cloves of garlic (with their peel on) at 180 degrees should do. The roasted garlic is a lovely addition to either the tahini dressing or just chopped up on top of your salad
  2. Assemble all your salad elements (except for the walnuts) however you like them. Whilst your radishes are still in the oven, prepare your dressing:
  3. Whisk everything together in a bowl (I just use a fork) and season to taste; you may want more acidity/sweetness etc. You can add a raw clove of garlic or wait for your roasted one in the oven, which will leave you with a more subtle taste.
  4. Take the walnuts (or other nuts/seeds of choice) and roast them in a pan for a few minutes; then also add to your salad.
  5. Check on your radishes; you want them to be slightly soft; they should have also lost their pungency.
  6. Optional: add a clove of roasted garlic to your tahini dressing by simply squeezing it out it's peel. Whisk again and then pour over your salad
  7. Enjoy.
